Well I've been trying all weekend to make flatbread pizzas (thanks for your inspiration, I love them!) but have been out or busy most of the time. And tonight we're having baked cod, corn casserole and salad. Definitely going for the pizza tomorrow night though. I'm cooking for one and it's such a handy thing to do!
I hope you enjoy the flatbread pizzas when you try them. My favorite part about that recipe is it makes a reasonable amount of dough for the recipe. Plus, you can refrigerate it for future use if you only want to make one. There are so many great ways to use it. My favorite so far is spicy brown mustard, Swiss cheese, Parmesan cheese, proscuitto, and carmelized onion. DELISH!
